- 中文摘要: 在實驗動物體內,二甲基亞硝胺是一個?烈的致癌物。醃製肉類及魚類食品中曾發現含有極微量的此種亞硝胺。本?究 先利用氣相層析法(GC)分析市售鹹魚樣品,根據GC?留時間判斷,發現十個樣品中有二個樣品可能含有二甲基亞硝胺。 但當此兩樣品用Selected Ion Monitoring(SIM)氣相層析質譜法(GC/MS)分析時,發現?面並無含有二甲基亞硝胺。此 結果顯示,如根據GC?留時間來測定食品中是否含有亞硝胺,往往會把食品中干擾的化合物誤認?亞硝胺,所以如果要 確實可靠的鑑定,應當採用GC/MS法。本研究所用的GC/MS法,不是通常所用的掃描整個質譜,而是用Selected Ion Monitoring方法。此法不但具有GC/MS的鑑定化合物的確實可靠性,同時敏感度增加,定量也容易。
- 英文摘要: Dimethylnitrosamine (DMNA) is a potent carcinogen in experimental animals. Trace amounts of DMNA have been reported in nitrate/nitrite-treated meat and fish products. In this study, ten salted fish samples were first analyzed by GC on both the packed column and the glass capillary column, two of them showed the presence of a chromatographic peak coincidence with the retention time of DMNA. However, when GC/MS using selected ion monitoring (SIM) technique was used for confirmation, no DMNA was detected in these two samples. This indicates that identification of nitrosamines in foods by GC based on retention times of chromatographic peaks can often give false positives, they should be confirmed by a more specific method such as GC/MS. With its increased sensitivity and capabilities for unambiguous identification, SIM technique in GC/MS analysis is an excellent method for the analysis of nitrosamines in foods because very trace amounts of nitrosamines are generally present in a very complex food matrix.
