- 中文摘要: 以菌種及麴的製備、高梁酒釀造、次級代謝物的生產、穀粒儲藏、中間水分食品的製備及細菌附著於生澱粉顆粒或纖維素粉末為例,在本文用顆粒基質與固態醱酵(SSF)的特定變數來描述SSF目前的地位,而SSF的優點與缺點也與其未來改進的可能性一併加以討論。
- 英文摘要: The parameters specific to solid substrates and solid state fermentation (SSF) are given here withthe examples of spawn- and koji- (starter) making, sorghum brewing, secondary metabolite production,grain storage, preparation of intermediate moisture food and bacterial adhesion on/in raw starch granulesor cellulose powder to characterize the present status of SSF. The advantages as well as disadvantages ofSSF were also discussed along with the possibility of its future improvement.
