- 中文摘要: 由埃及三葉草、甘藷藤、胡蘿蔔葉及燕麥中抽取濃縮葉蛋白,經分析其粗蛋白、礦物元素、胡蘿蔔素及氨基酸含量結果,四種作物中以埃及三葉草濃縮葉蛋白質含量最高,胡蘿蔔葉蛋白有芳香氣味,易為人接受,燕麥葉蛋白中含有較高的纖維素,而甘藷藤打碎後形成膠狀,不易分開汁液及殘渣,葉蛋白抽取不易。 四種作物濃縮葉蛋白中,除了胡蘿蔔葉蛋白中含蛋氨酸量較低外,其他濃縮葉蛋白的氨基酸組態皆在 FAO 推薦標準之上。 濃縮葉蛋白中含礦物元素量偏低。
- 英文摘要: Leaf protein concentrates (LPC) preparedfrom four kinds of crops, namely Trifolium ale-xandrinum (berseem clover), Ipomoea batatas(sweet potato), Daucus carota (carrot) and Avenasativa (oat) were analysed for crude protein,mineral elements, β-carotene and amino acids.Berseem clover LPC exhibited the highest proteincontent as compared with any other LPC in thisexperiment. Carrot LPC had a good odor andwould be acceptable for human consumption.Oat LPC had higher fiber content than others.The extraction of sweet potato LPC was noteasy for it is difficult to separate the residue andthe juice of sweet potato vine and leaves. Except methionine in carrot LPC, the contentof essential amino acids of LPC in this study wasabove the FAO provisional pattern and wasadequate in its nutritional amounts. The ratio ofmineral elements in LPC was low. Hence, addingmineral element was necessary when feedinganimal with LPC. However, the LPC so generatedmight be used for improving protein-poor diets.
