Cellophane/PE/CPP 及 PE 三種塑膠材料以真空法、灌充二氧化碳法及一般空氣包裝法將四種不同含水量 (89%, 11%, 13% 及 15%) 之花生,包成許多小包,放在室溫貯藏一年,每月取出樣品、觀察花生是否長霉,並分析有無黃麴毒素之產生及花生水份含量。PE 材料因為透氣率高,不適於真空或充氣包裝,故只作一般空氣包裝。 實驗結果顯示,8% 含水量之花生,無論用上述那一種包裝材料及方法,花生貯藏一年期間都不長霉也不產生黃麴毒素“不過利用 PE 袋而以一般包裝法包裝時,花生貯藏三個月後開始有蛀蟲產生。另一實驗結果顯示,8%含水量可提高至9.5%,而以一般方法包裝,則在四個月貯藏期間仍未長霉;10.5%含水量之花生,則在二、三個月內就開始長霉。11%及13%含水量之花生,如用 MTC/PE/CPP 材料而以真空或灌充二氧化碳包裝時,如包裝能維持真空狀態,則在五個月至一年貯藏期問,可維持不長霉,但利用真空法包裝時,包裝袋容易失去真空,故不適用。同時含13%水量之花生長期貯藏期間,花生易酸敗,也不適用。總之,如花生含水量低於9.5%,則採用本試驗所用之任何包裝材料與方法都有效地防止花生長霉;如花生含水量超過9.5~10.5%,而沒有高到使花生酸敗程度,則利用 MTC/PE/CPP 材料而以灌充二氧化碳方法包裝,結果最為良好。
- 英文摘要: In this study, three packaging materials(PET/PE, M.T. Cellophane/PE/CPP and PE)were used to pack peanut kernels. The packag-ing methods examined were vacuum packaging,CO -filled packaging, and air-packaging. ForPE packaging material, only air-packagingmethod was used; for the other two packagingmaterials, all three packaging methods wereused. Four levels of moisture contents ofpeanut kernels (8%, 11%, 13% and 15%) wereexperimented. The packaged peanut kernelswere stored at room temperature for one year.Every month, two packages each of differentkinds of samples were taken out and examinedfor fungus growth and aflatoxins production. The results showed that neither fungusgrowth nor aflatoxins production was found inthe peanut kernels which contained 8% ofmoisture no matter what testing materials andpackaging methods were used for packaging.Another experiment showed that the 8% kernelmoisture content could be raised to 9.5% andthe packaged peanuts could be stored for atleast four months without any indication offungus growth even the air-packaging methodwas used for packaging. When MTC/PE/CPPmaterial was used to pack 11% and 13%moisture content samples and the bags weresealed by either vacuum or CO -filled method,the samples could be stored for five months ormore without any sign of fungus growth if thebags still maintained vacuum. However, arelatively high percentage of vacuum-sealedpackages was found to lose vacuum if the bagswere sealed by vacuum packaging method. Forthe samples which contained moisture higherthan 11%, PE and PET/PE packing materialswould not prevent fungus growth.
