- 中文摘要: 自1962年起,龍鬚菜在本省南部首先以人工養殖法栽培,至今已有18年?史;龍鬚菜除生食外主要用作製造洋菜的原 料。本文由龍鬚菜的不純物、灰分、金屬含量,洋菜收率和洋菜膠?度和氣候因子探討龍鬚菜品質之季節性及地區性之變化,以期改進臺灣產洋菜的品質。 由實驗得知本省養殖龍鬚菜的品質受藻種類、培養地區和氣候影響。洋菜收率在16%到40%間,而洋菜膠強度在 100g/cm2到580g/cm2間,臺灣南部養殖的龍鬚菜較高。 由各因子的相關性發現:在佳冬地區(1)日照期和洋菜收率,(2)日照期和洋菜膠?度,(3)洋菜收率和洋菜膠?度,(4)溫度 和洋菜收率,(5)溫度和不純物含量和(6)不純物含量和洋菜收率間呈顯著相關;在東港地區(1) 、 (2) 、 (3)分別和佳冬區一樣,(4) 不純物和灰分含量,(5)不純物和鈣量和(6)灰分含量和洋菜膠?度間呈顯著相關;然在臺南(1)日照期和溫度,(2)溫度和不純物量和(3)溫度和灰分含量間呈顯著性相關。嘉義地區只有不純物量和洋菜收率間呈顯著性相關性。由上述結果知日照期影響臺灣養殖龍鬚菜之洋菜收率和膠?度;因此需選擇具廣鹽性、廣日照?度性和廣溫性的龍鬚菜品種以期提高洋菜之品質。
- 英文摘要: The agar-agar quality of Gracilaria cultivated in Taiwan is affected by the species of seaweed, cultivation location and weather conditions. Yields of agar were between 16% and 40%. The minimum mean yield (26%) of agar occurred in October 1977, while the maximum mean yield (40%) or agar occurred in February 1978 and July 1978. Jelly strength of the agar-agar produced in the southern part of Taiwan was generally higher than that produced in the central part of Taiwan. In the Chiatung area, there were significant correlations between: (1) amount of sunshine and the yield of agar, (2) amount of sunshine and jelly strength of agar, (3) yield and jelly strength of agar, (4) temperature and impurity of the seaweeds, (5) temperature and the yield of agar and (6) impurity of the seaweeds and the yield of agar, while in the Tungkong area, there were also significant correlations between: (1), (2), (3) are alike above respectively, (4) impurity of the seaweeds and ash content of agar, (5) impurity of the seaweeds and Calcium of agar and (6) ash content and jelly strength of agar. However, in the Tainan area, there were significant correlations between: (1): amount of sunshine and temperature, (2) temperature and impurity of the seaweeds and (3) temperature and ash content of agar. In the Chiayi area, there was significant correlation between impurity of the seaweeds and the yield of agar only. In conclusion, it is definite that the length of sunshine was a factor affecting the yield of agar and jelly strength of agar which was extracted from Gracilaria cultivated in Taiwan. Therefore the quality and the yield of agar can be predicted on the basis of weather conditions.
