- 中文摘要: 以前報之近似穩態熱傳導模式及醱酵試驗結果為依據,設立大型長方形固態醱酵槽(酒醪8噸)與鐵車醱酵槽(酒醪600公斤)進行醱酵試驗,檢討醱酵產熱率及醱酵產酒量,結果在醱酵產熱率方面,大型醱酵槽測得第一次及第二次醱酵之產熱率(kcal/kg)分別為23.4及25.0而前報之圓柱型醱酵槽之產熱率則分別為21.7及24.5,二者相當接近。在醱酵產酒量方面,以100公斤高粱粒原料(水分11.5%)計算100%酒精之產量:春夏兩季進行二次醱酵試驗所得之產酒量,大型長方形醱酵槽分別為29.8公升及32.1公升,空調室內鐵車醱酵槽分別為29.6公升及30.2公升,而室外鐵車醱酵槽分別為24.1公升及22.5公升,前二者醱酵產量已達到公賣局規定三次醱酵總100%酒精之產量28.4公升,而且前二者之增產率比後者室外鐵車醱酵槽增加約25%,由以上結果顯示以近似穩態熱傳導模式設立大型長方形醱酵槽進行大量醱酵試驗所得結果十分良好,可作酒廠設立固態醱酵槽之參考。
- 英文摘要: A 8-ton rectangular bioreactor with a cooling jacket was designed on the basis of a one dimensionalpseudosteady heat conduction model for scaling up sorghum brewing. The fermentation heat (total heatgeneration/mash weight), with the rectangular bioreactor, was 23.4 and 25.0 (kcal/kg) for the 1st and 2ndfermentation, respectively. These data were comparable to 21.7 and 24.5 (kcal/kg) of the previous studyin cylindrical type fermentation (0.6 ton). In two fermentation trials carried out in spring and summer,the total alcohol prouduction of each trial based on 100 kg of raw sorghum grain (moisture 11.5%) wasaround 31 liters. However, the conventional bioreactors in an air- conditioned room produced only 29.6or 30.2 liters while in a room with ambient temperature 24.1 or 22.5 liters was produced. Therefore thenewly designed bioreactor for sorghum brewing showed better results than the conventional types. Thisalso suggests that the consideration given to the thermal conductivity of solid mashes is essential to thedesign of the proposed bioreactor.
