此等結果可結論一些?可能為罐頭中竹筍引起脫錫作用的原因。
n - 英文摘要: The solution of individual bamboo peptide, ATP or ADP was mixed with stannous ions in the molarratio of 1:0,1:1,1:2 or 2:1 and titrated with a standardized NaOH solution. By analyzing the pH shiftson the titration curves, one could identify the binding sites of the ligand molecules.Peptides which containhistidine residues bind stannous ions more strongly than the amino group of N-terminal by chelating themetal ion in cooperation with the neighboring peptide N. Sn(II) bind with ATP through theβ-and γ-phosphate groups and N-7 of adenine as judged from thetitration data and the available examples of Cu- and Zn-ATP complexes. From the results obtained, it could be concluded that some of the bamboo peptides may bind tinso strongly as to enhance tin corrosion in the canned state.
