中式黴火腿中產毒真菌及黃麴毒素污染問題之研究

本研究從中式黴火腿上分離出67株黴菌菌株,經鑑定結果發現有 50 株屬於 Aspergillus 菌屬,其中 2 株為 Asp. flavus,6 株屬於 Penicillium 菌屬,其餘 11 株為 Rhizopus 及其他菌屬;Asp. flavus 分離菌株經培養於 YES medium 中並不產生黃麴毒素,為非產毒菌株。又本研究同時發展應用高壓液態層析法測定火腿內之黃麴毒素含量。以 5 ppb 及 20 ppb 二種不同濃度之黃麴毒素 及 做回收試驗,其回收率分別為 77.3~91.0%及 75.0~86.0%。測定市售黴火腿共 30 件,皆未發現污染黃麴毒素。

Sixty-seven molds were isolated fromfermented Chinese hams. Among these isolates,50 strains were identified as the genus Aspergillus,6 were Penicillium, and 11 were Rhizopus andother genera. It was found that two strains ofthe aspergilli isolated were Asp. flavus, but noaflatoxins was produced when grew in YESmedium. Procedure for quantitative analysis ofaflatoxins in fermented ham is proposed usinghigh pressure liquid chromatography with appro-priate cleanup procedures. Average recoveriesof aflatoxin and at 5 ppb and20 ppb were 77.3-91.0% and 75.0-86.0%, respec-tively. Thirty samples of fermented Chineseham were analyzed and found to be free ofaflatoxins contamination.
