為探討醱酵槽規模放大之設計基準,本研究引用數目平衡模式(Population Bal-
ance Model),企以其參數一攪拌強度為規模放大的基準,並經由實驗來試驗以攪拌強
度為規模放大基準之可靠性。本文為其首段工作,首先完成500L醱酵槽中,攪拌強度對
?酸收率之影響,因之,在不同之攪拌動力下,進行麩酸醱酵培養與攪拌強度測定,並沿
用Kono等人之理論對麩酸醱酵做動力學解析。結果是:麩酸之生成僅與不具分裂生殖
能力之菌體濃度有關連,與具有分裂生殖能力之菌體濃度無關連。增加攪拌強度(B)有
利於麩酸之生成,在B<0.6 1/sec時,麩酸收率顯為攪拌強度所左右,但(B>0.6 l/sec
時,麩酸收率受攪拌強度影響不大“由實驗測定B值,得一關係式B=0.183 (Pv/D2)0'299
此結果佐證了Corrsin經由湍流理論導出B一const(Pv/D2)1/3之可靠性。
t - 英文摘要: The effect of mixing intensity on glutamic acid fermentation in a 500liters fermentor is studied by using a population balance model and theKono's kinetic model. The results show that the yield of glutamic acidfermentation depends heavily on its mixing intensity as B<0.6 sec-1, whilethe analysis of data, indicates that the production of glutamic acid onlyassociates with concentration of nongrowth cells and not affects by con-centration of the growth cells. Correlation of the experimental resultsshows that the mixing intensity is proportional to 0.299 power of P▼/D2which fairly agrees with the theoretical result given by Corrsin [3] andEvangleista et-al [5].
